OSCAR LIMON (Your personal chef)

Oscar´s menú is a list of some of his favorites but if you have something special in mind ask him. We recommend ordering dishes for your group ie. more than one person and not one per person as they are made specifically for you.  (So as not to order the pie for just one piece as you could say)-unless of course you are just one person.

Every meal is made just for you. You won´t find that or these recipes in a restaurant here. Oscar caters to your home or event- Breakfast, lunch, dinner, appetizers, bar, or special menu.

APPETIZERS
Shrimp and veggie stuffed avocado: Avocado halves stuffed with veggie and shrimp mayonnaise salad

Tamarind Sauce shrimp: pan-fried shrimp with garlic, onion and a special bittersweet tamarind sauce.

Stuffed chile Guero: Long yellow chile grilled and stuffed with cheese or tuna salad

Guacamole:  Traditional avocado dip with chips

Mexican fruit and cheese plate: Seasonal fruit with a variety of Mexican cheeses.

Stuffed Jalapeños:  Jalapeños stuffed with cheese.

Ceviche:  Fish or shrimp cooked in lime juice.   A coastal favorite.

Oscar´s Ceviche:  Shrimp cooked in lime juice with smoked oysters and avocado.  One of his recipes..

Aguachile shrimp: For the spicier side of Mexican cuisine. Shrimp cooked in chiles.

Cucaracha shrimp: Blackened shrimp with a kick. A new taste.

Pico de gallo:  Combination of Jicama, cucumber, orange slices, carrots, chile ancho powder and lime juice.

SALADS

Grilled sweet pepper salad :  a combination of three different grilled sweet peppers on top of a green salad with sesame seeds and dressed with a red wine vinaigrette

Poblano and pecan salad : green salad with grilled chile poblanos and pecans dressed with a chile poblano, pecan, and cream dressing.

Cactus salad:   Nopal cactus cooked and sliced for a traditional Mexican salad.

Papaya salad :  Greens topped with papaya, onion, celery, apple, shredded carrots, nuts, and raisins with choice of a papaya seed  vinaigrette.

Shrimp salad :  Greens topped with shrimp, avocado and other vegetables with a light  vinaigrette.

SOUPS

Black Bean soup: traditional creamy soup made with black beans, cream and spices.  A taste of ancient Mexico.

Aztec soup: also known as tortilla soup. Made of chicken stock, tomato, chile chipotle and fried tortilla. This is a Must.

Tlalpeño Soup: Mexican style chicken and veggie soup. Really tasty.

Carrot and cilantro soup: A creamy specialty served with toasted bread.

Pozole:  Hominy with pork or chicken or beef.  Very traditional

Lima soup:  traditional dish of Yucatán gastronomy.  Chicken soup with a sweet lemon flavor.

Shrimp stew: A rich spicy soup with vegetables and shrimp.  A specialty.

Flor de  calabaza soup: A creamy soup.

MAIN DISHES--Served with rice, and vegetables or beans

Tequila marinated Chicken: chicken cut in pieces marinated with tequila and pan-fried. Garnished with caramelized veggies.

Shrimp stuffed Pineapple: One of Oscar´s original recipes.  Pineapple halves stuffed with grilled shrimp, pineapple, onion, green pepper, cheese and spices.

CHILE RELLENOS: Poblano chilies stuffed with cheese and battered with a flour and egg white. Dressed with a sweet tomato sauce.   Try it with shrimp too.

CHILEs en nogada:  Grilled poblano chilies stuffed with a special preparation of beef, pork meat and 15 other ingredients, dressed with a walnut and pomegranate sauce.

Red snapper Veracruz style: This is a Mexico’s full flavored dish. Fresh red snapper oven cocked with tomato onions olives cappers and spices.

Mahi mahi filet in banana leaves:  Fresh mahi mahi filet cooked in banana leaves to hold in the flavor.

Mahi mahi filet seasoned Oscar´s way: Fresh mahi mahi filet marinated in an amazing dressing to bring out the flavor.
 
Mango tequila shrimp: A specialty. Onion and garlic enhances the flavor of tequila in to the shrimp.

Coconut curry shrimp:  A sweet and flavorful sause.

A la diabla shrimp:   Shrimp in a spicy red sauce.

Breaded Shrimp:  A Lightly breaded shrimp.

Pork in tequila adobo: Three different dried chilies mixed  with herbs and tequila makes a special dressing for the pork meat.

Pork loins with peanut sauce: brown pork loins covered with a peanut sauce.

Pork ribs in sweet mole: Grandma´s receipe.

Chicken Pibil: A slightly spicy red salsa poured over chicken or pork.

Steak:  T-bone, rib eye……

flautas:  Fried corn tortillas filled with chicken or beef. 

chicken or steak fajitas:  Chicken, steak, or shrimp grilled with a combination of peppers and onion and comes with beans, rice, and guacamole.   

Fish or shrimp Tacos:  Beer battered strips of fish or shrimp in tortillas.

Hamburgers: beef or shrimp

Ceviche:  Fish or shrimp cooked in lime juice.   A coastal favorite.

Burritos:  Fish, shrimp or octopus burritos with a sauce.

THE BAR
Oscar can create all mixed drinks and provide excellent bar service.
Recommended Specialties
MARGARITAS: There is the traditional lime but there are also specialty margaritas. Strawberry, or depending on the season Mango, Guava,… etc.  REALLY THE BEST.  Not kidding. 

Piña Coladas

Mojitos: Cuban drink but a popular favorite.

Clamato and beer: Oscar`s recipe is like no other.

Michaladas: Lime, chile and beer.
